Grilled Veggie and Hummus Wrap is my go to snack for lunch. I know you must be thinking how a wrap loaded only with vegetables tastes. Am I right ? Don’t worry and trust me because it is something so delicious that will surely make you go head over heels for it. I have tried it a zillion times and never get bored of it. Eager to know the recipe so here you go, follow the instructions below and serve yourself with a mouth watering wrap.

Ingredients (for 2 wraps) :

  • 2 large whole wheat wraps or tortillas

  • 1 sliced zucchini

  • 1 sliced red bell pepper

  • 1 sliced yellow bell pepper

  • ½ red onion

  • 1 tablespoon olive oil

  • Salt as per taste

  • Black pepper as per taste

  • Garlic powder (optional)

  • ½ cup hummus (any flavor – plain, roasted red pepper, etc.)

  • 1 cup fresh spinach or arugula

  • Feta cheese, avocado slices, lemon juice, hot sauce (optional)

Instructions :

  • Preparation of veggies : Toss the zucchini, bell peppers, and red onion in olive oil. Add salt and pepper accordingly. Add some garlic powder if you want.
  • Grill or Roast : If you like cooked veggies then use a grill or a grill pan. Cook for 4 to 5 minutes per side until tender on a medium flame. If you like roasted veggies then roast it for about 20 minutes at 220 degree celsius in an oven. Flip the veggies halfway to roast them well from both the sides and to prevent over heating or over cooking.

  • Warm the Wraps : Heat the wraps in a dry skillet for 30 seconds per side or microwave for 10 seconds to make them a little warm.

  • Assemble : Spread 2 to 3 tablespoons of hummus down the center of each wrap. Then, put a layer of grilled vegetables, spinach or arugula, and any extras like feta or avocado. I f you like it spicy then add some red paprika or crushed red pepper flakes.

  • Wrap it Up : Fold the sides, then roll tightly like a burrito. Slice in half and serve warm or chilled.
