
Tired of eating same boring vegetables everyday then you must try it with a twist A pan of stir – fry veggies which will make you fall in love with it. A healthy veggies bowl which is great for dinner, meal prep, or a quick lunch.
Ingredients –
1 tbsp olive or sesame oil
1 bell pepper, sliced
1 zucchini or yellow squash, chopped
1 cup broccoli florets
1 carrot, thinly sliced
2 cloves garlic, minced
1 cup cooked rice or quinoa (optional, for serving)
For the peanut sauce –
2 tbsp peanut butter
1 tbsp soy sauce
1 tsp maple syrup or honey
1 tsp rice vinegar or lemon juice
1–2 tbsp warm water to this
Instructions –
Make the sauce : In a bowl, whisk together all peanut sauce ingredients. Set aside.
Cook the veggies : Heat oil in a pan over medium-high heat. Add garlic, then veggies. Stir-fry for 5–7 minutes until just tender but still crisp.
Add the sauce : Pour the peanut sauce over the veggies. Stir to coat evenly and cook another minute.
Serve : Spoon over rice or quinoa, and top with crushed peanuts or sesame seeds if you like. You can also toss in some tofu with it.
