Tired of eating same boring vegetables everyday then you must try it with a twist A pan of stir – fry veggies which will make you fall in love with it.  A healthy veggies bowl which is great for dinner, meal prep, or a quick lunch. 

Ingredients –

  • 1 tbsp olive or sesame oil

  • 1 bell pepper, sliced

  • 1 zucchini or yellow squash, chopped

  • 1 cup broccoli florets

  • 1 carrot, thinly sliced

  • 2 cloves garlic, minced

  • 1 cup cooked rice or quinoa (optional, for serving)

For the peanut sauce –

  • 2 tbsp peanut butter

  • 1 tbsp soy sauce

  • 1 tsp maple syrup or honey

  • 1 tsp rice vinegar or lemon juice

  • 1–2 tbsp warm water to this

Instructions – 

  1. Make the sauce : In a bowl, whisk together all peanut sauce ingredients. Set aside.

  2. Cook the veggies : Heat oil in a pan over medium-high heat. Add garlic, then veggies. Stir-fry for 5–7 minutes until just tender but still crisp.

  3. Add the sauce : Pour the peanut sauce over the veggies. Stir to coat evenly and cook another minute.

  4. Serve : Spoon over rice or quinoa, and top with crushed peanuts or sesame seeds if you like. You can also toss in some tofu with it. 

A healthy and delicious vegetable bowl is ready for you in a very short span of time. Enjoy it with friends and family at dinner gatherings, house parties, etc.
